About the Author:
Damyanti Gajjar trained as an Ayurvedic Primary Health Care Advisor in 1998 and is registered with The Chiropractors, Homoeopaths and Allied Health Service Council of South Africa. She formulated a course in ayurvedic nutrition and has taught intermittently since 2000. She has made several trips to India researching the various aspects of ayurvedic nutrition and herbs used in cooking. Damyanti believes in eating as close to the ground as possible and using herbs and spices to enhance one’s well being. Preparing food should be an adventure and not a chore. Understanding the qualities of ingredients will license one to eat wisely. Being in tune with nature’s rhythms greatly influences her philosophy on life.
